For "ease of setup" and "ease of understanding"? I'd highly recommend people check out Courier. Not only do I find it extremely nice that they put everything into a single ".box" file for you, so when you need to reformat, it's 1 file, but the interface makes a lot of sense. It's got VERY advanced junkyard and mail filters, and handles (I believe) unlimited pop3/imap accounts! (If not unlimited, a VERY large number)
It's definately a very good solution to the "lazy man's" email client. Heck, I even have it startup minimized on boot on one of my systems, and it just sits there, every 15 minutes it goes out and checks my email for me. Talk about your lazy persons dream!
Yeah, I'd definately say it's worth checking out.
